Wales prop Jenkins and international team-mate Gareth Thomas scored the tries and Jonny Wilkinson kicked 13 points as the tourists bounced back from the defeat by the New Zealand Maori last Saturday.
"It was disappointing after Saturday, we wanted to get back on a winning note," said Jenkins.
"I think a lot of effort has gone in during the week. As a pack our defensive line went really well," Jenkins told Sky Sports 1.
Jenkins admitted the Lions we disappointed not to turn their possession and dominance into more tries, particularly after the break.
"We had a lot of possession in the first half and we couldn't quite turn it into points.
"I don't score many tries so you just want to put the ball down before somebody catches you," he added.
The Welshman admitted the win had boosted confidence in the tourists' camp.
"It's good for the morale of the squad. Every game out here is a tough battle and it's good to get a victory."
